Apple-cabbage Skillet
 
 
3   Golden Delicious apples  
  Butter flavored cooking spray  
6 cups    shredded green cabbage  
1/2   medium onion, thinly sliced  
2 Tbs    water  
1 Tbs    cider vinegar  
1/4 tsp    salt  
1/4 tsp    pepper  
1 lb    fully cooked low-fat turkey sausage  
2 Tbs    minced fresh parsley  
  prepared brown mustard (optional)  
 
1 Core and grate 2 of the apples.
2 Spray a large skillet with cooking spray and heat over medium temperature.
3 Add grated apples, cabbage, and onion; sauté‚ 5 minutes, stirring frequently.
4 Stir water, vinegar, salt, and pepper into apple mixture.
5 Pierce sausages with fork and place on top of mixture.
6 Cover and cook 10 minutes or until cabbage is just cooked and sausages are heated through.
7 Core and quarter last remaining apple; add to skillet mixture along with the parsley.
8 Cook, covered, for 2 minutes.
9 To serve, divide mixture among serving plates, placing one apple quarter on each plate. Serve with mustard.
10 Makes 4 servings.
