Core and grate 2 of the apples. |

Spray a large skillet with cooking spray and heat over medium temperature. |

Add grated apples, cabbage, and onion; sauté‚ 5 minutes, stirring frequently. |

Stir water, vinegar, salt, and pepper into apple mixture. |

Pierce sausages with fork and place on top of mixture. |

Cover and cook 10 minutes or until cabbage is just cooked and sausages are heated through. |

Core and quarter last remaining apple; add to skillet mixture along with the parsley. |

Cook, covered, for 2 minutes. |

To serve, divide mixture among serving plates, placing one apple quarter on each plate. Serve with mustard. |
