Indian Pork Jalfrezi
 
 
  cooking spray  
2   medium onions, chopped  
2   medium red peppers, chopped  
1 Tbs    tomato puree  
10 1/2 oz    lean pork tenderloin, cubed  
1   medium green pepper, sliced thin  
2   garlic cloves, crushed  
2   inches ginger, grated  
1   medium green chilies, chopped fine  
1 Tbs    curry powder  
1 tsp    chili powder  
1 tsp    cumin seeds  
500 g    tomatoes, canned  
1 Tbs    fresh coriander leaves, chopped  
  salt and pepper to taste  
 
1 Heat a non-stick pan and spray with cooking spray. Stir-fry the onions and red peppers for about 8min until the peppers are soft and the onion is brown.
2 Put the onion and red pepper mixture into a food processor. Add the tomato puree and whiz until smooth. Set aside.
3 Heat the non-stick pan and spray again with the low-fat cooking spray. Stir-fry the pork and green peppers.
4 Return the onion and pepper puree to the pan and then add all other ingredients, except the seasoning and coriander. Heat gently until simmering, then cover the pan with a tight-fitting lid and cook for 10min.
5 Remove the lid and cook for 2-3 min more until the sauce is reduced and thickened slightly.
6 Season to taste then stir in the coriander leaves and server.
