Zucchini Succotash
2 Tbs    olive oil (or use olive oil spray)  
1   clove garlic, minced  
2 Tbs    minced onions  
2 cups    diced zucchini  
2 cups    corn kernels  
2 cups    cooked lima beans or edamame beans  
1   medium green bell pepper, minced  
1   medium red bell pepper, minced  
  salt and pepper to taste  
  paprika (optional)  
In a large skillet, heat oil and sauté garlic and onions. Add remaining ingredients. Season with salt and pepper. Cover and simmer until zucchini is tender. Sprinkle with paprika, if desired.
